Snowflake Cookies

Jazzed up Sugar Cookies – a lemon zest and cognac spiked dough topped in a cream cheese icing.

Snowflake Cookies

Recipe makes about twenty-four 1 1/2″ cookies.

Cream together:

  • 2 sticks (1 cup) salted Butter (room temp)
  • 1 cup Sugar

Add:

  • 1 Egg
  • the zest of 1 Lemon
  • 1 tsp Vanilla Extract
  • 1 tbsp Cognac

Gradually shift in and combine until uniform:

  • 2 1/2 cups Flour
  • 1 1/2 tsp Baking Powder
  • 1/2 tsp Salt

Place the cookie dough in refrigerator for a couple of hours or overnight.

Preheat oven to 350 degrees.

Remove the dough from the fridge and roll it out until it is about 1/4″ thick.

Cut out the snowflakes, and place them on parchment lined cookie sheets.

Bake them for about 8 minutes, or until they are no longer appear shiny.  You want them to be puffy, white, and soft to touch.  This is a very caky cookie. They will harden as they cool.

Let the cookies cool completely before you frost them.

Cream Cheese Frosting

Cream together:

  • 8 oz of Cream Cheese (room temp)
  • 1 stick (1/2 cup) salted Butter

Add:

  • 1 tsp Vanilla Extract
  • 2 tbsp Milk
  • dash of Salt

Gradually add until all the ingredients are well combined:

  • 3 cups Confectionary (Powdered) Sugar

Frost your cookies 🙂
