It’s been crazy hot in Vermont this past week. Last Thursday, Burlington was listed as one of the warmest cities in the country based off of the daily highs, outstripping both Miami and L.A. – truly bizarre. Most May’s you wouldn’t even dare to plant your gardens until after Memorial Day for fear of a late season frost. Not that I’m complaining, but as I’m dripping sweat and trying to stay cool my mind has turned to those satisfying summer treats – that craving for something cold and sweet, something to take the edge off of the heat, and something to joyfully embrace the wonderful season to come.
Unfortunately, it’s to early on in the season for all the lovely local produce that is indicative of summer, and I wanted to create a treat that was low fat, didn’t require the use of the oven (way too hot!), and was easy to make. These frozen yogurt sandwiches fit the bill, and are quickly becoming a personal summer favorite. I used store bought graham crackers. Trader Joes has some nice ones, that will give your sandwiches that extra molasses-y edge, but any graham cracker will do. The key is that you don’t have to turn on your oven and bake them yourself! Select your favorite low-fat frozen yogurt (I choose a coffee flavored one – I could use the extra buzz!), and your good to go. That simple.

Ingredients:
- Graham Crackers
- Frozen Yogurt
Directions:
- About 15 minutes before assembling your sandwiches pop your graham crackers into the freezer, and remove your frozen yogurt from the freezer and set it out on the counter to soften slightly.
- Line a tray with parchment paper, and make sure there is room for it to sit flatly in your freezer.
- When you are ready to assemble your sandwiches, scoop a ball of frozen yogurt onto the center of your graham cracker, take your second graham cracker and gently press it onto the top of the frozen yogurt.
- Place your finished sandwiches onto the tray.
- Work quickly to keep from making too big of a mess, but if the yogurt really starts to melt you can return everything to the freezer for another 15 minutes and start again.
- Once you have your sandwiches assembled return them to the freezer for a couple of hours to finish setting up before serving.
- If your not going to eat them all at once, let them solidify overnight, then transfer them into a freezer bag or a tightly sealed container, and enjoy them throughout the month.
