Chocolate Chip Cookies

A mid-week treat, and a little something to counteract the dreary April showers…

Recipe makes 4 dozen cookies.

Ingredients:

  • 1/2 cup (1 stick) Butter (room temp)
  • 1/2 cup Vegetable Shortening (room temp)
  • 1/2 cup Sugar
  • 1 cup Brown Sugar
  • 2 Eggs
  • 1 tsp Vanilla Extract
  • a few rasps of fresh Nutmeg
  • 2 1/2 cups Self Rising Flour (or 2 1/2 cups regular Flour, 1 tsp Baking Soda)
  • 1/2 tsp Salt
  • 3/4 cup semi-sweet Chocolate Chips
  • 3/4 cup mini Chocolate Chips

Directions:

  1. Preheat the oven to 350 degrees.
  2. Cream together the butter, shortening, and sugars.
  3. Beat in the eggs.
  4. Beat in the vanilla, nutmeg, and salt.
  5. Add in the flour, and continue to beat until fully combined.
  6. Stir in the chocolate.
  7. Scoop the dough out onto parchment lined baking sheets – about 1 tbsp of dough per cookie.
  8. Bake for 10 – 12 minutes, or until the tops of the cookies are no longer shiny.  They might be slightly puffy and soft when you pull them out, but they will sink down and solidify as they cool.

  2. I love a straightforward classic chocolate chip cookie recipe and this is exactly that. I am yet to find THE perfect recipe so until then I will happily try out as many as possible. It’s a tough job, but someone’s gotta do it haha. Thanks for sharing yours.

The recipe below is my latest attempt at the perfect chocolate chip cookie, but it has been a long, ongoing journey, and if you have any further suggestions for improvement, I would love to hear them.

      1. The struggle is real isn’t it haha. Ok, maybe I don’t really mind trying out all these different kinds of chocolate cookies but still, haven’t found THE one yet. Looking forward to seeing you in the group. Maybe some of the other members have some tips too.
